The Story Behind This Recipe
In Dharwad, a meal is not a meal without jolada rotti. My father hand-patted twelve of these every morning before sunrise for our family of eight. The tawa has to be scorching hot and the water sprinkling is an art — it creates the steam that puffs the rotti from inside.
Ingredients
- 2 cups jowar (sorghum) flour
- Hot water
- Salt to taste
Instructions

Knead the flour with hot water and salt into a soft dough.

Pat each ball into a thin round on a damp cloth.

Roast on a hot tawa, sprinkling water, until it puffs.

Finish briefly over an open flame for char.
