The Story Behind This Recipe
During Dasara in Mysuru, every house smells of besan and ghee. This recipe came to us from a halwai neighbour who had spent decades perfecting it for the Mysore Palace kitchen. The trick is adding ghee at just the right moment — when the mixture starts to foam and pull away from the sides.

Make a one-string sugar syrup.

Whisk in besan steadily to avoid lumps.

Add hot thuppa in batches, stirring until frothy.

Pour into a greased tray and cut while warm.
